ISO 22000:2018 is the international standard for Food and Safety Management that specifies the general requirements and the ability of organizations to control any hazards to ensure food safety.

As part of the ongoing revision of standards, the International Organization for Standardization (ISO) published on June 18, 2018 the new edition of the ISO 22000 standard. The revision was carried out in the context of updating the food safety requirements based on experience, data available from its 12-year implementation, the development of other private standards, compliance with legislation, developments in food science and industry.

The new edition includes a large number of changes that have been included, so that participants are trained to better understand what is required and how it can be combined with the implementation of other management systems in an organization and are also given an analysis of the requirements of ISO 22000:2018, the practices for complying with these requirements and the way to organize and conduct inspections in accordance with the international standard ISO 19011.

The purpose of the training course is:

  • The detailed description of the requirements of the ISO 22000:2018 and ISO 19011 standards
  • The understanding of basic methodologies for designing and implementing practices complying with the requirements of the ISO 22000:2018 standard
  • The required knowledge for organizing and conducting audits of Food Safety Management Systems

The training methodology includes lectures, practice and teamwork.

In this context, the participants are asked to carry out group and individual exercises, role playing exercises, and evaluation tests that aim to develop their skills (time management, teamwork, cooperation).

In the end, a satisfaction questionnaire is distributed to the participants in order to evaluate the results of their training and the achievement of its objectives.

  • Presentation of the system categories and the certification process of the standards for all organizations and of the basic concepts of Food Safety Management
  • Presentation of the changes and of their simultaneous explanation through diagrams and comments
  • Comparison of the current version with the new one
  • Summary presentation and analysis of the requirements of the ISO 22000:2018 standard, with emphasis on those that experience has shown to be misinterpreted (e.g. requirements of paragraph 6.2), or are not taken into account during the design stage (e.g. requirements of paragraph 7.4.4)
  • Presentation with simple examples of compliance practices as well as alternative proposals for creating required records based on the requirements of the ISO 22000:2018 standard
  • Detailed presentation, explanation and practical training of the participants with the requirements of the ISO 19011 standard
  • Presentation of various types of audits, as well as of the followed methodology during the 1st, 2nd and 3rd part of auditing
  • Presentation of the Accreditation System in Greece
